Since the glorious feast of Pentecost is fast approaching, I thought I would pop in a few ideas for you to consider doing with your family.
Pentecost Cake ~
This is a simple Angel Food cake mix (yes, from a box) frosted with heavy whipping cream and garnished with sliced (large) strawberries to represent the "tongues of fire" of the Holy Spirit. Easy and delicious. Just keep little monkey hands at bay before serving :)
NB: I like to sweeten the whipping cream with a little confectioner's sugar and a splash of vanilla or you could use lemon zest as well.
(Can you believe SP was so little. Two years makes a big difference in these little people's lives, sheesh!)
Pentecost Cupcakes ~
Another alternative and just as pretty and representative are these cupcakes with the strawberries cut in thirds to make the flames. You can't forget to include the lovely and timeless Mary, Mother of Jesus picture book by Tomie dePaola to round out the feast! His illustrations are among our favorites for children's book authors and this particular illustration is lovely and so telling of what Mary and the apostles were experiencing. My kids just love to look through these over and over.

Hi Meredith, what a beautiful blog you have! You have saved my day. I have left Pentecost preparations to the last minute. Now I know what we can bake to celebrate. Your cakes look so delicious but simple too. And we also have the Tomie dePaola book. I just love the illustrations. I'm off to make my cake shopping list. Thank you!

Meredith, thank you for your beautiful reply to my comment. Would you believe the supermarket didn't have a single punnet of strawberries. But I was determined to find some and went on a search because we really want to have a 'tongues of fire' cake today to celebrate Pentecost. Cake, strawberries and cream are all ready.
